Yes! But there is a right way and a wrong way.
Don’t Do This at Home
Let’s talk about the wrong way first. Last week I had two fairly large bunches of bananas just about gone by. They were good enough for banana bread, but not yummy enough to eat straight out of the wrapper. Usually I like to make bread, but sometimes I find myself short on time and the bananas end up in the trash because they’ve even gone past the point of being good for bread.
I had “heard” somewhere I could freeze them. So I stuck them in the freezer. And thought they’d be great for making banana “ice cream.”
After a few days in the freezer they didn’t look so bad right? Well, the problem became apparent when I went to use them. Every try to take skin off a frozen banana?
The Right Way
Even though it takes an extra minute, peel your bananas BEFORE you freeze them. It takes a tiny bit more time than just plopping the whole bunch in the freezer, but less time than making a loaf of banana bread.
In the end the work was worth it, and the frozen bananas made excellent “ice cream.” I got the idea for the ice cream from the Yonanas gadget that is popular right now. If you haven’t seen it, Yonanas turns frozen bananas into ice cream. Instead of buying yet another appliance I wondered if I could do this with my blender.
I selected the “Ice Crush” option to lightly blend the frozen bananas into a frozen yogurt like consistency.
It turned out pretty good. My 13-year-old wasn’t a fan. He said it tasted too much like bananas?! In his defense he only likes regular bananas. If you wouldn’t eat banana flavored ice cream normally, then this might not be your thing. My oldest thought that it might taste good with a tiny bit of vanilla added, so we’ll try that today. Three kids are coming over to play after school, and it is turning into another hot day.
